Which cooking oil should we use?
This normally depends on the recommendations we usually get from our friends and family. Advertisers easily fool us because we are ignorant of the science behind choosing our oils.
There are two simple factors which we should keep in mind while deciding what to use.
1. Smoke Point
This is the point which at which our oil becomes rancid or full of free radicals. As a rule of thumb, for high temperature cooking we should probably use a cooking oil with a high smoke point. Coconut oil, avocado oil, Ghee etc. are good options.
2. Omega 6 to Omega 3 ratio.
This is imperative. An excess of omega 6 in the body leads to inflammation. This makes our body vulnerable to a host of diseases. Extra virgin olive oil and ghee/ butter are very good choices.
3. Avoid Refined oils.
The process of refining oils strips them of all their nutrients.The final product is unhealthy. Instead opt for cold pressed and organic oils.
